New Chef for Cotswold Restaurant

If you’re a fan of the American fantasy drama television series, ‘Game of Thrones’, please don’t be put off by the name of this stylish restaurant in Minster Lovell called ‘The Wildling’.

In the drama, Wildlings are cruel killers and thieves, but the name for the restaurant was chosen as it means ‘where nature’s untamed spirit finds its voice, emphasizing a raw, natural, or independent state’.

Set on the banks of the River Windrush in the centre of pretty Minster Lovell, the Wildling opened earlier this year and promises to ‘unleash your taste buds’ with ‘a bold and untamed dining experience to ignite your adventurous side and take you on an exhilarating journey through the region’s finest produce’.

This is all down to new Chef, Matt, who has been in the business for over 20 years but only recently came to The Wildling from its sister restaurant, the Slaughters Country Inn. Since his arrival, Matt has tweaked the menu to include tasty sharing dishes and his signature desserts of Passionfruit Cheesecake with Mango and Coriander and a Sticky Toffee Soufflé with Butterscotch Sauce and Salted Caramel Ice Cream.

The sharing dishes comprise a choice of Smoked Duck Breast with Rhubarb, Ginger and Sorrell, the Cured Monkfish with Carrot, Orange and Ginger and Charred Asparagus with Honey, Lavender and Pine Nuts.

The mains consist of ‘Farm to Field’ choices of Squash Risotto or Braised Lentils; ‘Out to Pasture’ with red meat offerings; fish from the ‘Tide to Table’ menu and a ‘Bit on the Side’ featuring various vegetables and chips or fries.

Part of the Andrew Brownsword Hotel group, the Wildling in the Minster Mill Hotel oozes authentic, classic charm in this tranquil corner of the Cotswolds.

What first grabs your attention on arrival is the awe-inspiring dining room with vaulted ceilings and period oak beams, Cotswold stone walls, harmonising wooden furniture and a roaring fire that, Manager Clive, made sure was continuously stocked with large logs.
